The maple/dijon combo is all the flavour it needs! It's really simple. I just crush a whole clove of fresh garlic, add about a tablespoon or two of dijon mustard, a bit of salt, a splash of balsamic vinegar, and a good splash of maple syrup. Put it under the broiler for 6-8 minutes depending on the thickness of the fish et voila. OM NOM NOM.
I do all that in a Ziploc bag, btw. The marinating I mean.
