Its sort of the pork equivalent of Wagyu beef in a way, very heavily marbled and flavoursome. I make a marinade with lemon juice, light soy sauce, honey, little bit of pepper and white wine for it to sit in for an hour.

Tree guys are here to prune back our catalpas. Glad to finally see the dead shit get cut off. Should have been done in the spring though. But nobody ever listens to me.
