3mins and I'm getting yelled at Ian...
1 quail, per person, there is a lot of meat on the little bastards. For a recipe to work, you need to know how many people are eating
edit- use this
Get 6 quail, about 4 decent sized slices of prosciutto
Some butter
2 onions 1/8th
2 carrots chunked
1 celery stalk, also chunked
1 turnip or leek (white bit only) peeled or chunked
3 potatoes, peeled and chunked
Half a lemon sliced thinly
250ml dry white wine
250ml chicken stock
1 big rosemary sprig
Big chunk of diced parsley
1 huge ass casserole dish or deep sided baking tray
Pre-heat the oven to Gas4 or 180deg C
Add the quail to the dish with plenty of room between them if you can
Add the vegetables and lemon around them
Rip the sprig to bits and add that in, drizzle the mix of wine/stock over the lot
Melt some butter and put it over the birds and then cover the breastbone with the prosciutto... if you don't have that, very lean bacon might do.
Garnish with sea-salt and pepper over everything
Cover and cook for 45min-1hr
Uncover and cook for 30mins
Take it out and garnish with the parsley.
