What I do is get half a dozen fresh plums and a small tomato, peel a lemon gently with a grater (no pith.. the white stuff) add the rind and then squeeze the rest of the lemon into the mix, add in-
1 tbsp of red wine, 1 tbsp crushed ginger, 1 tbsp brown sugar and a little bit of sweet chilli sauce.
Boil that bastard in half a litre of water, then let it cool before taking to it with a masher or barmix to chunk it up a bit.
Get the chunk of mutton, I used a 3/4 leg so it would fit in the cooker and then poured the sauce over the top, leave it on low for about 8 hours.
